The Poké Bowl! A delicious dish originating from the beautiful tropical islands of Hawaii! Yes, Hawaii, not Japan as many people think. In the early 1970s, on those wonderful islands, they created a dish of finely chopped raw fish served over delicious rice in a bowl. A national dish was born. This dish made its way to the mainland United States and became a culinary hit there as well. Now, Poké bowls are everywhere, with every chef creating their own variations of this tasty dish.

Ingredients:

  • Sushi rice
  • Fresh sashimi quality salmon
  • Sashimi grade fresh tuna
  • Avocado
  • Chuca Wakame
  • Wasabi mayonnaise
  • White and black sesame seeds
  • Nori sheet

Poké Bowl with salmon and tuna recipe

I use delicious Japanese sushi rice for Poké Bowls. I’ve tried it with other types of rice, but really good Japanese sushi rice is what I continue to like best. Prepare your rice as if you were going to make sushi. I use about 80 grams of rice per person for a Poké Bowl. Put the rice in a large bowl. The rice may still be a tiny tad warm.

Time to prepare the toppings. I’m going to divide the salmon, tuna, avocado and wakame like a pizza slice on my bowl of rice.

Take your salmon and cut it into nice little cubes and set aside. Do the same with your tuna.

Grab a ripe avocado, cut it in half and remove the pit. Now cut your half avocado crosswise into nice, straight strips and then do this widthwise. Next, take a teaspoon and scoop out the cubes of avocado and sprinkle them in a triangle over your rice.

Put the salmon on one side of the avocado and the tuna cubes on the other side. You’ll be left with a triangle, that’s where you’re going to place your wakame seaweed.

Finally, shred a nori sheet. Use a razor sharp knife for this. Sprinkle these along with the sesame seeds over your Poké Bowl.
