International growth also continues to be impressive. In the United States and Canada, sushi has become a billion-dollar industry, and in Europe you can see several sushi stores in almost every city. In Australia and New Zealand, you see exactly the same thing happening. This proves that sushi is not just a trend, but an enduring favorite among lovers of good food.

Sushi is something you almost never eat alone. It is a shared experience, whether you dine out with friends, family or colleagues. Moreover, the variety of sushi on the table allows you to taste, exchange and experiment together. Shared dining to the fullest!

In addition, eating sushi is an activity in itself. Japanese food culture is all about experience – from dipping your nigiri in soy sauce to neatly rolling up a hand roll. This makes sushi a perfect dish for a fun night out or a special home experience.

Sushi used to be seen as an exclusive dish for the elite, but those times have changed. Nowadays you can find sushi everywhere: in supermarkets, at festivals, in all-you-can-eat restaurants and even at food trucks. It has become more affordable and accessible, putting it at everyone’s fingertips.

Besides, sushi suits any occasion. A quick lunch? Check. A romantic dinner? Absolutely. A festive treat? Definitely. Sushi is no longer a luxury item, but now a regular part of our eating habits.

Japan has a huge influence on international gastronomy. From ramen and matcha to yakitori and sushi – Japanese cuisine is loved around the world. Sushi is one of Japan’s greatest culinary exports and has effortlessly adapted to local tastes and preferences. In the early 1970s in America the famous California Rolls emerged and in Europe we love fusion sushi rolls, for example, fresh Italian truffle. For example, high in the Swiss Alps, I ate a blissful nigiri with flambéed salmon and Italian truffle at Kaizen in Crans-Montana. Fantastic!

And don’t forget South American cuisine, with its influences of ceviche and spicy sauces. Nikkei-Kitchen is a great example of how to bring a completely new flavor to sushi.

As a result, sushi remains constantly evolving and surprises people worldwide time after time. For centuries!
