Cooking the perfect sushi rice with a pan on the stove
Cooking rice for sushi is many times easier and better if you do it with a good rice cooker. If you do not have a rice cooker, there is no other way than to cook your rice with a pan of boiling water.
First wash the rice very well to remove all the starch powder that sticks to the grains. After you wash the rice, soak it in cold water for about 30 minutes. The rice will then absorb the water which will make it cook more evenly.
How long to cook perfect sushi rice?
After the 30 minutes of soaking, put the pan with water and rice on medium-high heat and bring the rice to a boil. Keep the lid on the pan. And no…..you don’t sneak a peek either. That will only ruin the rice.
When the water starts to boil, turn down the heat and let the rice cook until all the water is absorbed by the grains. For 2 cups of sushi rice in 2 cups of water, this will take about 20 minutes.
When all the liquid has been absorbed, turn off the heat. Important: Keep the rice covered in the pan and let it stand for another 10 minutes. Even though the heat is off, the rice continues to cook in the steam and this last part of the process is one of the most important, you can’t skip it or rush it!
After the last 10 minutes, it’s time to season the rice.
How do you flavor sushi rice?
You have now washed and cooked the rice, now it is time to season the rice. After all, you don’t just get that specific taste that sushi is so famous for!
How does the rice get that delicious taste? Well, because Su is added through it. Su is a mix of rice vinegar, sugar and salt. Indispensable to get the real taste of sushi.
To make Sushi-Su, for 3 cups of dry sushi rice use 0.5 cup of rice vinegar, 2 tablespoons of sugar and 2 teaspoons of salt. Stir all this together and add this to the rice.
Once you have done this, make sure your sushi rice is at room temperature and you can start rolling delicious sushi! For example, try the famous California Roll!
