We’re going to do it! After years of sushi, fun workshops, pounds of rice and thousands of enthusiastic participants, it is time for a new chapter. An adventure that I, Rik Keijzer, owner and founder of the School of Sushi, have been dreaming of for years. Together with my wife Corinne Keijzer (indeed, the LinkedIn expert of the Netherlands) I am going on a unique world trip. On September 2, 2025, we will board a plane to Japan, the starting point of a culinary dream that has been bubbling for years: a trip around the world, in search of the real stories behind sushi and the many delicious world cuisines intertwined with it.
A journey that revolves around discovery, tasting, meeting and documenting. And the best part? You can come with us!
We will literally and figuratively explore the world of sushi, from the northernmost tip of Japan to the southernmost tip of Patagonia. From wasabi fields to seaweed farms. From traditional Japanese sushi bars to the innovative Nikkei kitchens of South America. We capture it all in a weekly YouTube documentary, for anyone as passionate about food, travel and culture as we are.
If you’ve ever stood at the sushi table with me, you know that I not only love to roll sushi, but also love to tell the story behind it. And it’s exactly for those interesting stories that we are now going around the world……

A YouTube docuseries full of flavor, culture and stories
During our journey, we will create a weekly documentary on YouTube: a series capturing the fascinating world of sushi and Japanese (and broader Asian and South American) food culture. Don’t expect a slick TV production from us, but a pure, personal, honest and in-depth journey full of beautiful encounters, amazing flavors and special insights.
As we are in everyday life, so will we film our documentary: With an open-mind, brimming with curiosity and warm enthusiasm.
In the years I’ve been doing sushi now, I’ve found that sushi is much more than raw fish and rice. It is culture. Precision. Honor. Patience. Warmth. And most of all, it’s people work. Together, we go in search of those people and their stories. Because through those people and their stories you feel the connection with food…..with sushi!

First stop: Japan - the heart of sushi
Our journey, of course, begins in the country where sushi originated: Japan. We start at the very top on the island of Hokaido in Sapporo, known for its fantastic seafood. From there, in two months, we will slowly travel down through Sendai, Nikko, Tokyo, Kyoto, Osaka and end in Fukuoka.
We dive deep into all things sushi and Japanese gastronomy. Think about:
- Visits to iconic and hidden sushi restaurants
- Tours of wasabi farms in Matsumoto
- Tastings and interviews at sake breweries
- Mornings at famous fish markets, such as Toyosu in Tokyo
- Interviews with artisanal Japanese knife makers in Sakai who forged my own line of knives
- Reports at seaweed farms for nori
- Visits to soy sauce and mirin brewers
- We even visit Japanese vineyards and farms to discover how delicious wine and local ingredients pair perfectly with sushi.
We want to tell the story behind every ingredient and piece of sushi. We will watch, listen, taste, learn and share. Who makes it, where does it grow, why does it taste the way it does? These are the special stories that make sushi truly special.

Afterwards? A journey through world cuisine
After Japan, we travel on to countries where sushi lives, changes, enriches and adapts to local tastes:
- Vietnam: discovery of Gỏi Cá Trích, the distinct Vietnamese variety of sashimi, and the rice fields in the Mekong Delta where special sushi rice is also grown today
- Cambodia & Laos: fresh seafood, local fish farms and fermentation techniques
- Thailand: fusion sushi, street food and traditional Thai cuisines with Japanese influences
- Malaysia, Singapore, Indonesia: melting pots of cultures, ingredients and techniques
- Brunei, Borneo, Philippines, Palau: islands with their own influences – tropical fish, coconut rice, Poké bowls and more
- Australia & New Zealand: sustainably farmed seafood, unique varieties of fish, pairing with their rich wines and the rise of sushi fine dining
- Pacific Islands: Hawaiian influences, Polynesian cuisine and the origins of the Poké Bowl
- South America (Peru & Chile): the colorful Nikkei cuisine (which I was introduced to by Katinka Lansink Dodero got to know), where Japanese and Latin American flavors merge. Think: ceviche meets sushi, soy meets chili. We visit salmon farms in the Chilean fjords, talk to chefs in Lima, and dive into the cultural layers behind the flavors.
It will not only be a culinary journey, but it will be a journey into the soul of each region, told by the people who cook, grow and create with love every day.

We engage with the people behind the flavor
A big part of our journey is interviewing local chefs, farmers, fishermen, producers and artisans. Not just about what they make, but about why. What drives them? What is their mission? How is their relationship with tradition, innovation, sustainability?
A sushi chef in Tokyo, a chef on a tropical island in the South Pacific, a young entrepreneur in Hanoi….they all have something to say. And we get to capture that. That feels like an honor and it just feels right for us to take this next step in our lives.
