After spending two unforgettable months in Japan, diving deep into the world of sushi, my wife and I felt more inspired than ever. We met passionate sushi masters, visited traditional soy sauce makers, explored wasabi farms high in the mountains, and even tasted our way through Japanese wineries. Every stop added a new layer of appreciation for the craftsmanship behind sushi.
Now, we’re ready for the next chapter.
From 6 December, we’re travelling through Australia for six months, and we’re on a mission to discover the most exciting sushi chefs, omakase restaurants, and wine pairings this country has to offer.
Australia’s food scene is bold, multicultural, and constantly evolving and we can’t wait to explore how local chefs blend Japanese tradition with Australian creativity
Why Australia? Sushi + Wine = Perfection
At School of Sushi, we love the harmony between sushi and wine. Crisp whites, elegant rosés, light reds, they can lift the flavours of fish and rice to surprising heights.
And where better to explore this pairing than in Australia?
With world-class wine regions and an open-minded culinary culture, Australia is the ideal place to discover:
